Nuits-Saint-Georges is made from Pinot Noir. The grapes are destemmed between 80 and 100% depending on the vintage. The maceration lasts 15 to 18 days in open oak vats. The aging lasts 16 to 20 months in oak barrels, 60 to 100% of which are new.
